Munch Salsa


Good morning sunshine!


We made this delicious salsa the day before for our tacos and then had it for breakfast today with our eggs. This is such a great salsa to use on anything! It's even better over night.

This makes at least 6 servings
(not counting if you ate it as a salad, which we did along with our  breakfast) 
2 tomatoes diced
1 avocado cubed
1 can of corn tidbits rinsed and drained
2 sprigs of Chinese green scallion diced (basically green onion)
A small handful of parsley finely chopped (optional)
1 Lemon (adjust to your liking)
Salt & Pepper to taste
A dash of olive oil

Toss all ingredients into a bowl squeeze the lemon juice, add a dash of olive oil and give it a good mix. Add the salt and pepper to taste, we also added a dash of cayenne pepper and some dried oregano to give it a nice aroma.


 Enjoy, because we sure did!
